Cinnamon Swirl Bread

Ingredients & Directions


6 oz Buttermilk; microwaved 20

3 tb Honey
3 tb Egg
2 tb Butter; unsalted
1/2 ts Ground cinnamon
2 1/4 c Bread flour
3/4 ts Salt
1 1/4 ts Yeast

Put all the ingredients in the pan. Start the bread machine and start a
kitchen timer for 30 minutes. Cover a bread board with plastic wrap and
dust with flour. When the time is up, remove the dough from the container
with your hands, leaving the bread pan in place in your machine. Place
dough on floured board. Dust top of dough and your hands with flour. Pat
dough into a 6″x10″ rectangle. Combine 2 teaspoons cinnamon and 1 tsp.
sugar. Spoon mixture in three long rows, down the dough. Roll dough into a
fat cylinder, left to right, then fold it in half twisting the ends
together. Place the dough, ends down, back in the bread machine, close the
lid and continue the cycle.

Comments: I used buttermilk powder mixed with water instead of buttermilk,
and didn’t zap it for 20 seconds as it was already warm as I used lukewarm
water. I used regular margarine and decreased the salt some. I always use a
bit more yeast as it seems to rise better in my machine.

Notes from the recipe: The 30 minutes is just a guide. You need to wait
until it is done kneading and starts the first rise before you take the
dough out. In my machine that was closer to 35-40 minutes. The editor also
said that if your machine has a preheat or rest phase at the beginning of
the cycle, the 30 minutes doesn’t start till after that. Also be sure to
keep the machine closed while you are putting the cinnamon on so any heat
in the machine stays in. Work as quickly as possible because the machine
still ticks off the time while you’re doing it.

I found it to be extremely sticky, and although the editor said not to use
much flour on your hands and the plastic wrap – I HAD to! I also found that
the dough was very mooshy G and the instruction to “fold in half twisting
the ends together” was a joke. I folded it (by this time it had “mooshed”
itself into a totally different shape) and tried to twist (yeah – right).
It then slooped into the bread machine, there was no “placing” it
anywhere!! BUT the final result was excellent and I will make it again!
