Orange Nut Bread

Ingredients & Directions


2 c Kellogg’s Special K
3 c Sifted flour
3 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/4 c Soft shortening
3/4 c Sugar
2 Eggs
3/4 c Frozen orange juice
Concentrate,thawed
1/3 c Milk
1/2 c Chopped nutmeats

Crush Special K slightly.Sift together flour,baking powder,soda and
salt.Blend shortenling and sugar; add eggs and beat well. Stir iln
orange juice,milk and nutmeats. Add sifted dry ingredients; mix well.
Stir in Special K. Spread in greased loaf pan. Bake in moderate oven
350 degrees for about 55 minutes,or until done.cool thoroughly before
slicing. Spread with cream cheese filling to make finger sandwiches,
if desired.
